Full of indian spices and a whole clove of chewy garlic in almost every bite, this pickle is jam-packed with rich, complex flavour and the deep, slow, satisfying burn of naga chillies.
To say nothing of the subtle, sweet, dark fruit undertones which its dates and sultanas provide, in order to counteract even the slightest trace of any bitterness from the spices.
It’s a gorgeous savoury accompaniment to strong cheeses, meats and Indian cuisine but also more than capable of acting as the base to curry of its very own.
